This tasting experience will lead to a summation of all characters – a look into the third dimension and true spirit of IWA. To explore our philosophy – the throughline of balance, mouthfeel and complexity, alongside my ambition for creating unique variation with each individual Assemblage
The formulation is never carbon copy. It is born purely from the grounds of experimentation and creativity. Each Assemblage is significantly distinct in character.
When we first launched IWA in Japan, this approach was ‘out of the box’. People needed time to adjust and accommodate. Now, some six years along, in Japan, our birthplace, and around the world, there is so much genuine excitement. There is anticipation around each Assemblage and a desire for discovery, surprise and comparison to the point of preferring one or another. The IWA game!
Beyond Assemblage variation is age worthiness, making development in the bottle against the odds! IWA’s evolution through time is for the better – deeper, more complex, more integrated and streamlined. As you discover each release, there is both variation and development. It’s a combined phenomenon.
This trilogy collection of IWA Assemblages 4 (2022), 5 (2023) and 6 (2024) allows for endless combinations, propositions and above all, playfulness! It is an intriguing series, as they are all so distinct, coming from different inspirations.
IWA Assemblage 4 (2022) is more in the direction of Japan – white aromatics with a sense of great fluidity and dynamics and yet juicier and joyful. To be enjoyed with fish, fruit and vegetal.
IWA Assemblage 5 (2023) is a counterpoint. I have been making it more dramatic. More structure and depth. Subtle, silky tanins. Somewhat more in the direction of wine, without mimicking anything. To be enjoyed with more bold flavors – darker, richer, and even with spice. From chocolate to red meat.
IWA Assemblage 6 (2024) is a synthesis of all prior releases. It is a seminal tipping point. Closing one cycle and opening another. More focused. Resulting in greater balance than anything in the past, I dare to say. There is something classic revisited. There is more on every direction – every axis. I have been traveling the world witnessing the reactions and clearly Assemblage 6 is hitting the right trigger. It has a more universal reaction. To be enjoyed with any food scenario. It is truly versatile across the full spectrum of flavors and global dishes.
I invite you all to explore the different paradigms, along with service temperature, from chilled, to cellar, room and body temperatures, and glassware. There are no rules! I hope this tasting experience offers you discovery, dialogue, comparison and shared pleasure.
