July 11th - Kome Collective Tasting with Chika Martino

We kick off our July Saturday tasting series with Kome Collective, since this is a Kome Collective newsletter takeover after all! We welcome Chika Martino from Breakthru Beverage to the True Sake tasting counter. Chika will be showcasing a fantastic lineup of sakes imported by Kome Collective, pouring Daishinshu Junmai Daiginjo "Equilibrium," Kojimaya Cedar Barrel Aged "Untitled," and Shiokawa Cowboy Yamahai Junmai Genshu.

The Equilibrium dazzles with crushed pineapple and rose petal aromas and a powdery minerality that's impossible to erase from memory. The Untitled is one of the most thrilling sakes we carry, cedar barrel aged with rare notes of maple, vanilla, sarsaparilla, and black cherry, yet kept light on its feet by a touch of residual CO2. And the Cowboy Yamahai, first discovered by True Sake owner Beau Timken, bucks Niigata's crisp-and-clean reputation with a smoky, savory, yet silky finish. July 18th - Perfect Pairing Trading Tasting with Jackie Yen

We welcome Jackie Yen from Perfect Pairing Trading to the True Sake tasting counter, where she will be showcasing Taiun Sake from Shimane Prefecture, the brainchild of Chen-toji, the first ever Taiwanese born master sake brewer.

Expect sakes rooted in tradition yet full of surprises, from savory yamahai depth and silky kijoshu opulence to bright, citrus driven brews with a wine-like acidity that natural wine and craft beer lovers will find impossible to resist. Made with brewing rice from Taiwan by a Taiwanese brewer in Shimane Japan, these are sakes brewed with passion and purpose. And as a bonus, we may even be previewing a brand new white koji bottle. This is one you won't want to miss. Come by Saturday from 2:00 to 4:00 PM and see what all the buzz is about! 

 

 

July 25th - Fukumitsuya Tasting with Ayako Nakamura

We welcome Ayako Nakamura from Fukumitsuya Sake Brewery to the True Sake tasting counter, where she will be pouring directly from one of Japan's most storied breweries. Founded over 400 years ago, Fukumitsuya is the oldest brewery in Kanazawa, Ishikawa Prefecture, and their sakes are a testament to that legacy.

The star of the pour is the Fukumitsuya Kuroobi DO DO Yamahai Junmai "Black Belt," quickly becoming a True Sake staff favorite. Light, dry, and oddly refreshing for a Yamahai, this umami driven food pairing wonder delivers a nose of mushroom, leather, and milk chocolate with a palate of dashi, cocoa, and butterscotch. Stay tuned as we will be announcing two additional pours from Fukumitsuya's impressive lineup. Join us Saturday and taste history in a glass!
