Dassai Blue Yuzu
The nose on this new and very popular yuzu "citrus" sake is a wonderful collection of lemon pie, lime, rock sugar, lemon candy, lemon grass, and a hint of peach aromas. We all know Dassai only makes premium-grade Daiginjo sake. We all know that Dassai is brewed in Yamaguchi, Japan, and Hyde Park, New York. But we didn't all know that this incredible brewery has made a yuzu sake here using yuzu from Japan. Smooth, rich, silky, round, soft, and off-sweet, this elegant and beautifully packaged sake is built for those with a sweet tooth and a love for citrus cocktails of note. At only 11% ABV, it's superb in a wine glass on its own, but it also has the depth and body to invite a little added boost in mixed drinks. Look for yuzu jelly, lemon peel, candied lemon, powdered sugar, lemonade, and grilled yuzu flavors that rise above a very gentle umami whisper. The "gateway" sake brewery has produced a "gateway" yuzushu of note. WORD: Lemony WINE: Dessert Wines BEER: Citrus Ales FOODS: Cocktail fare, cheese and fruit plates, desserts, and mixers.
