Ilaka Sake Atelier is an elite brewery in Nagano prefecture whose initial release in 2024 brought immediate, award-winning recognition. The original brewery dates to 1665, but the modern concept imagines a totally novel idea under Toji Katsumi Tanaka: hyper-local rice, an entirely gravityfed brewery, and local Matsukawa water that takes a 30-year journey through local granite aquifers and is some of the softest in Japan. Eschewing conventional labeling paradigms, Ilaka release tiny amounts of luxury saké: intricately layered, pure, balanced with zero additives.
