Once a year, Akabu releases this special sake 'Kairyu Jinsui.’

The Akabu Brewery has taken its finest Junmai Daiginjo sake, freshly pressed, and applied the process of “binkan hiire” (pasteurization in the bottle), followed by maturation in an ice-temperature environment where time quietly accumulates.


Thanks to this ice-temperature aging, the sake can develop a deep, rich flavor and elegant aftertaste, all while maintaining a sense of clarity—without putting excessive stress on the quality of the sake.


Until now, AKABU has focused on creating products that emphasize freshness and vibrant flavor. For the past few years, they’ve been striving to craft a new style of sake—one that combines a clean profile with deeper complexity. Through an optimal aging environment, they have succeeded in creating a mellow and full-bodied flavor.
